Everything is implemented to meet a goal of high quality :
- Herbicides are prohibited to revive the ancient practice of tillage.
- Supervised Control, thinning out the leaves, green harvesting, plot selection, hand harvest, double sorting.
- A cellar of 18 temperature-controlled vats made of concrete.
- Two tapered wooden vats of 50 hl, thermo-regulated.
- A perfect cellar humidity through natural ventilation. Particular attention is paid to the choice of 8-barrels from different coopers.
- The Grands Crus winemaker, Eric Boissenot, offers advices for vinification and blending.
